Ingredients

  • 1 lb Ground meat or meatless crumble Beef, turkey, sausage, or meatless options work.
  • 1 medium Onion Optional, but recommended for flavor.
  • 2 cloves Garlic Adds additional flavor.
  • 24 oz Marinara sauce Jarred marinara is convenient.
  • 9 oz Lasagna noodles Broken into pieces or used any short pasta.
  • 15 oz Ricotta or cottage cheese Ricotta is classic, but cottage cheese can be substituted.
  • 8 oz Mozzarella cheese For topping.
  • 1/4 cup Parmesan cheese For topping.
  • 1 tbsp Italian seasoning For flavor enhancement.
  • 1 tsp Salt To taste.
  • 1 tsp Black pepper To taste.
  • 1 cup Water or broth To help cook the noodles.

Instructions

Preparation

  • Heat a little oil in a deep skillet, add the ground meat, and cook until browned and no longer pink. If there's excess grease, spoon some out.
  • If using, add the chopped onion and cook until soft, then stir in the minced garlic for about 30 seconds.

Cooking

  • Pour in the marinara sauce and sprinkle in the Italian seasoning, salt, and pepper. Stir and let it bubble for a minute.
  • Break lasagna noodles into rough pieces and stir them into the sauce. Add enough water or broth to barely cover the noodles.
  • Cover the skillet and let it simmer for 12 to 15 minutes, stirring occasionally to prevent sticking. If it looks dry before the noodles are done, add a splash more water.

Finishing Touches

  • Dollop ricotta over the top, then top with mozzarella and parmesan. Cover again for 2 to 3 minutes until the cheese is melted.
  • Remove from heat and let it rest for 5 minutes before serving.

Notes

Skillet lasagna can be customized with various add-ins like spinach, mushrooms, zucchini, bell peppers, or even a spoonful of pesto. For leftovers, sprinkle a little extra mozzarella before reheating.
