Ingredients

Garlic Butter Shrimp and Rice

  • 1 lb shrimp Peeled and deveined
  • 3 tbsp butter
  • 3 cloves garlic Minced
  • 1 tbsp lemon juice Freshly squeezed
  • 1 pinch chili flakes
  • 4 cups microwave rice Or leftover rice

Cheesy Bean Quesadillas

  • 4 pieces tortillas
  • 2 cups shredded cheese
  • 1 can canned beans Black or pinto

Turkey or Veggie Taco Bowls

  • 1 lb ground turkey Or substitute with mushrooms and peppers
  • 1 packet taco seasoning
  • 4 cups rice

Egg Fried Rice

  • 2 pieces eggs Scrambled
  • 1 cup frozen peas
  • 1 cup frozen carrots
  • 3 cups cold rice
  • 2 tbsp soy sauce

Pasta with Pesto

  • 8 oz pasta Any variety
  • 1 jar store-bought pesto
  • 2 cups spinach Fresh

Instructions

Garlic Butter Shrimp and Rice

  • In a hot pan, melt the butter and add garlic.
  • Add the shrimp, lemon juice, and chili flakes, cooking until shrimp is pink.
  • Serve the shrimp over cooked rice.

Cheesy Bean Quesadillas

  • Heat a skillet over medium heat.
  • Add tortillas, cheese, and beans; fold and cook until crispy.
  • Serve with salsa or sour cream.

Turkey or Veggie Taco Bowls

  • Brown the ground turkey or sauté vegetables in a skillet.
