Ingredients

Burrito Filling

  • 10 large tortillas (burrito size, flour works best for freezing) Use flour tortillas for best results.
  • 10 large eggs
  • 2 cups frozen diced hash browns (or 2 large potatoes, diced small) Hash browns save time.
  • 1 cup cooked breakfast sausage or bacon (optional) Adds flavor to the filling.
  • 1 to 1.5 cups shredded cheese (cheddar, pepper jack, or mix)
  • 1 large bell pepper, diced (optional) Adds color and crunch.
  • 1 small onion, diced (optional)
  • 1 small can diced green chiles or a few spoonfuls of salsa Choose thicker salsa to avoid soggy tortillas.

Instructions

Cook the Filling

  • Cook the potatoes. If using frozen hash browns, cook in a lightly oiled skillet until browned. If using fresh potatoes, dice and cook until tender and browned. Season with salt and pepper.
  • If using sausage or bacon, cook it next and set aside. Add onions and peppers to the skillet, cook until soft and moisture has evaporated.
  • In a bowl, whisk eggs with a pinch of salt and pepper. Add a splash of milk or water. Scramble in the skillet over medium heat until just set.

Build the Burritos

  • Lay tortillas out on a flat surface. Add a scoop of potatoes, eggs, meat (if using), sprinkle cheese, then a spoonful of green chiles or thicker salsa.
  • Avoid overfilling to prevent bursting; aim for 1/3 to 1/2 cup total filling per burrito.

Roll the Burritos

  • Fold in the sides of the tortilla and roll from the bottom up, keeping it snug. If tortillas tear, warm them slightly in the microwave.

Storage and Reheating

  • Let the filling cool slightly before wrapping. Wrap each burrito tightly in foil or parchment, then place in a freezer bag or container. Label with date and contents.
  • Store in the fridge for 3 to 4 days or freeze for 2 to 3 months.
  • To reheat, unwrap and microwave from the fridge for 1-2 minutes; from frozen for 2 minutes, flip, then 1-2 more minutes until hot.

Notes

Keep fillings drier to avoid sogginess. Adjust the amount of salsa and cook off excess moisture from veggies. Can customize fillings based on preferences.
