Instructions
Preparation
In a wide pot or deep skillet, heat olive oil over medium heat.
Sauté the chopped onion in the oil for about 3-4 minutes until softened.
Add minced garlic and tomato paste, stirring for 1 minute to develop flavor.
Cooking
Pour in crushed tomatoes and broth, then add smoked paprika and oregano.
Simmer for 8-10 minutes.
Add the fish chunks, gently spooning broth over them. Cook for 4-6 minutes until the fish flakes easily.
Finish with lemon juice, lemon zest, and fresh herbs. Adjust salt to taste.
Notes
Serve with crusty bread, rice, or a light salad for a complete meal. Adjust seasoning as necessary, and include extra lemon wedges for serving.
