Ingredients

Main Ingredients

  • 2 pounds boneless skinless chicken breast or thighs
  • 2 cups dry white rice or brown rice
  • 3-4 cups broth or water (depending on rice type)
  • to taste salt and pepper
  • to taste garlic powder, paprika, and a pinch of oregano
  • 1-2 tablespoons olive oil or avocado oil

Instructions

Preparation

  • Start the rice first. Rinse the rice if you do that normally, then cook it in broth for better flavor.
  • While the rice cooks, season the chicken generously with salt, pepper, garlic powder, paprika, and oregano.
  • Heat a skillet with a little oil and cook the chicken, searing both sides until golden and cooking to an internal temperature of 165°F.
  • Let the chicken rest on a plate for 5 to 10 minutes, then slice.
  • Quickly cook the veggies. Steam broccoli in the microwave or sauté peppers and onions in the same pan used for chicken.

Assembly

  • Assemble the bowls by scooping rice, adding chicken, and vegetables. Keep sauces on the side.
