Instructions
Preparation
Preheat your oven to 425°F (220°C).
Line a sheet pan with parchment or foil for easier cleanup.
If using dense vegetables, such as broccoli or carrots, roast them first. Add them to the pan and roast for about 10-12 minutes before adding the shrimp.
Cooking
While the vegetables roast, prep the sauce by mixing together honey, soy sauce, ginger, garlic, lime juice, and sesame oil in a bowl.
Once the vegetables have roasted, pat the shrimp dry and arrange them on the pan with the veggies.
Drizzle the sauce over the shrimp and toss everything gently to coat.
Return the pan to the oven and roast for an additional 6-9 minutes, flipping or tossing halfway through, until the shrimp are pink and curled into an 'C' shape.
Serving
Remove from the oven and transfer to a serving dish.
