  • 1 lb chicken thighs or breasts Cut into bite-sized pieces.
  • 1 can black beans Rinsed and drained.
  • 1 cup tofu Pressed and cubed.

  • 1 cup bell peppers Diced.
  • 1 cup cucumber Sliced.
  • 1 cup spinach Fresh.
  • 1 cup cherry tomatoes Halved.

Flavor Enhancers

  • 1 cup salsa For topping.
  • 1/4 cup peanut sauce For the peanut chicken crunch bowl.
  • 1/4 cup tahini or hummus For drizzling.

Crunchy Toppings

  • 1/4 cup pumpkin seeds To sprinkle on top.

Instructions

Preparation

  • Cook the rice or quinoa according to package instructions.
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet.
  • Cut chicken into bite-sized pieces and toss with olive oil, salt, pepper, garlic powder, and paprika.
  • Spread the chicken on the baking sheet and bake for 20-25 minutes or until cooked through.
  • Let the chicken cool before packaging.

Assembly

  • In meal prep containers, divide the cooked rice or quinoa as the base.
  • Top each with a portion of chicken, black beans, chopped vegetables, and a sauce.
  • Add a sprinkle of crunchy toppings.
