Instructions
Preparation
Cook the rice or quinoa according to package instructions.
Preheat the oven to 400°F (200°C) and prepare a baking sheet.
Cut chicken into bite-sized pieces and toss with olive oil, salt, pepper, garlic powder, and paprika.
Spread the chicken on the baking sheet and bake for 20-25 minutes or until cooked through.
Let the chicken cool before packaging.
Assembly
In meal prep containers, divide the cooked rice or quinoa as the base.
Top each with a portion of chicken, black beans, chopped vegetables, and a sauce.
Add a sprinkle of crunchy toppings.
