  • 1 pound Ground beef 80 to 85 percent lean preferred.
  • 1 small Onion, diced
  • 2 to 3 cloves Garlic, minced
  • 8 ounces Mushrooms, sliced Optional.
  • 2.5 to 3 cups Beef broth Start with 2.5 cups and add more if needed.
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Paprika
  • to taste Salt and pepper
  • 8 ounces Egg noodles
  • 1/2 cup Sour cream Full-fat preferred for creamy sauce.
  • 2 tablespoons Cream cheese or heavy cream Optional but enhances creaminess.
  • to taste Fresh parsley Optional for garnish.

Instructions

Preparation

  • In a deep skillet or medium pot, brown the ground beef over medium heat. Let it sit for a minute before stirring to allow for browning.
  • Add the diced onion and minced garlic to the beef, cooking until the onion is translucent.
  • If using, add the sliced mushrooms and cook until tender.
  • Stir in Worcestershire sauce, paprika, salt, and pepper.
  • Pour in the beef broth and bring to a simmer.
  • Add the egg noodles to the pot, pushing them down so they are submerged, and simmer until they are tender.
  • Once noodles are cooked, lower the heat and stir in the sour cream and optional cream cheese or heavy cream until creamy.
  • Adjust the consistency with more broth or water if the mixture is too thick.
  • Serve hot and garnish with fresh parsley if desired.

Notes

For best results, do not add sour cream while boiling; turn the heat down low before adding to avoid curdling. Leftovers can thicken; add broth or water when reheating.
