  • 1 pound chicken thighs or breasts, chopped
  • 1 tablespoon oil for cooking
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen can be used
  • 1 cup salsa
  • 1 to 2 teaspoons taco seasoning (or chili powder plus cumin)
  • Salt and pepper, to taste

  • Cheese
  • Cilantro
  • Lime
  • Sour cream

Instructions

Cooking Instructions

  • Heat oil in a big skillet over medium high heat.
  • Add chicken, season with salt and pepper, and cook until mostly done.
  • Add onion, garlic, and bell pepper. Cook until they soften a bit.
  • Stir in beans, corn, salsa, and taco seasoning.
  • Simmer for 5 to 8 minutes until thick and the chicken is cooked through.
  • Top with cheese and cover for a minute to melt. Finish with lime and cilantro.

Notes

If the mixture looks dry, splash in a few tablespoons of water or broth. If it's soupy, simmer uncovered for an extra couple of minutes. Add chopped jalapeno for heat if desired.
